Long before chocolate was ever sweet, it was a bitter drink. In the Maya highlands of what is now Guatemala, cacao seeds from Theobroma cacao were fermented, roasted, ground by hand, and whipped with water, chili, and ground maize into a frothy, dark, wholly unsweetened brew that bore no resemblance to a modern candy bar at all.
It was sacred and valuable, literally called the food of the gods, poured at ceremonies and passed as currency across Mesoamerica. The Maya and their neighbors drank it for vigor, medicine, and ritual, never once as a sweet children's candy.
When cacao finally reached Europe, it was remade almost beyond recognition over a couple of centuries. Sugar, milk, and increasingly heavy processing turned a bitter medicinal drink into the smooth, sweet confection sold on every shelf and checkout counter today.
That transformation is really the whole story here, because it quietly stripped out the very part that researchers now care about most. The thing that makes cacao genuinely good for you turns out to be, awkwardly, the same thing that makes it taste so bad on the tongue.

The active compounds are cocoa flavanols, above all epicatechin, and their main trick is raising nitric oxide, the signal that relaxes and widens the blood vessels from within. That improves the lining of the arteries and modestly lowers blood pressure, and because it also lifts blood flow to the brain, where epicatechin can actually cross into the tissue, the same compounds are being studied for memory and thinking.
On the heart side, the evidence is genuinely solid: controlled trials consistently show better blood-vessel function and a small but real drop in blood pressure at proper flavanol doses. On the mind side it is more mixed, with some trials showing sharper memory in older adults and one large study finding little overall, so the cognitive benefit is promising but not yet settled science.
The flavanols are bitter, so the sweeter the chocolate, the fewer remain.
Here is the catch that undoes most chocolate as a health food. Flavanols are bitter, so the very steps that make chocolate smooth and sweet, alkalizing the cocoa and loading it with sugar and milk, strip most of them away, which is why the benefit tracks flavanol content rather than how dark or expensive the bar looks, and why ordinary milk chocolate offers almost nothing at all worth having.
